Waking up at 6:30 a.m. starving means fixing something fast. We don't do hot breakfasts other than pancakes around these parts but I made this a few weeks ago on Easter Sunday because it felt like we needed something extra special. It seems some of our favorite meals are still the ones we learned to make when living with our friends right out of college, including this one. It only requires five things plus some seasonings. My kind of simple eating.
You'll Need: Pre-made pizza crust, pesto, 3-4 eggs, 1 1/2 cups of shredded cheese, six-eight slices of deli ham, minced garlic (optional), salt, pepper.
Heat your oven according to the pizza dough instructions (Pilsbury is 400 degrees). EDITED: Pre-bake your pizza crust for five minutes before adding your pesto or else you may have a doughy bottom. Unroll your pizza crust onto a cookie sheet and spread pesto over it to your liking. I used about four Tablespoons.
While your oven is heating up, make scrambled eggs. I added salt and pepper to mine.
Once your eggs are cooked to your liking, spread them lengthwise down one half of your pizza dough. Then add your shredded cheese, ham, and any other seasonings such as garlic, oregano, etc. Carefully, fold your empty half of the pizza dough over the full half and tuck under.
Bake for about 6-7 minutes or until your pizza crust startes to turn golden. This serves four unless you're feeding more than one manly man. It's great as a hot breakfast or as a simple dinner served with your favorite sides. In fact, we're having it for dinner tonight.
